"Samfaina" or "xamfaina" is a mix of stewed vegetables very typical in Catalonia. The word derives from the Latin symphōnĭia (symphony).
This recipe is for two persons.
Ingredients for the meatballs:
- 1/2kg Pork and veal minced meat
- One egg (a chicken one preferably)
- 2 garlic cloves
- Black pepper
Chop the dates. Pick the meat and start mixing it adding the other ingredients, one at the time and mixing them a bit before adding the next. If the stuff is not enough consistent, try adding a bit of breadcrumbs to it. Shape the meatballs a bit long (not rounded) to help the internal cooking, and rub them in breadcrumbs before putting them in to the frying pan with olive oil. It must be real hot oil to prevent the meatballs to lose shape and be crispy.
Ingredients for the "xamfaina":
- One aubergine
- One green capsicum
- One red capsicum
- One tender onion
- One garlic clove
- Olive oil
- Back pepper
Put oil on a frying pan and heat it up. While is heating, chop the vegetables into a tiny pieces. Put them into the pan and stew them for a while, correcting salt and pepper according to your taste
